Because notepad can make .exe programs with pop up forums and have over 100 ~ files in the source.

And yes, you can, if you know how to work with batch files. A few call's and goto's can do the trick.

Everyone would rather have a portable than an installer. Why on Earth would you be that stupid?

the installer is a portable, and the folder it installs everything in is portable, just install to the desktop, bam, portable

If you dont like it make your own, or extract everything and release a portable version that YOU update by yourself.

Installer won 4-2-1

Also later on the program is gonna have dependency's or files that it wont run without. Thats why the Installer in necessary. Unless you want cluter, just install it a folder on your desktop and delete the shortcut then. It's not that difficult.
