If not, is it possible to be a a separate type of demon? Like... a wolf demon. I'd still be a demon, but just a more specific form of one.

Why don't you just become a druid then? You can become a werewolf, though thats its only werewolf spell.
But no you would just have to be a plain demon, you can just focus your skills on a certain type of demons.

I slice the bandit boss' leg off.

HEY YOU! *points at the bandit boss*
Bandit: Save your breath lass, your going to need all the energy you can get.

survivor move: dragon partner has immune, but in exchange for being able to have a dragon, I sacrificed mine. Thus, while my dragon may become temporarily invulnerable, I have no "survivor move."
More information on my unique class:
Dragon-warriors are lucky warriors who found a dragon egg during their journeys. Upon the dragon's birth, they form a pact with the dragon and are bound to each other as partners. The dragon is a mighty beast, and in order to initiate the contract, the warrior must make a large sacrifice, his/her survivor move. The dragon is born with its own survivor move, and may use it as it wishes, but there are limitations.
The dragon requires some nourishment besides food in order to live, and its warrior partner must sustain it by providing it with 100 MP every day. Warriors recover about 150 MP per day. If the warrior is unable to provide for its partner, the dragon will go into hibernation until the warrior is capable of doing so. While the dragon is hibernating, the dragon-warrior will become an ordinary warrior, albeit still without its survivor move, making him/her slightly easier to target.
Note: The dragon is not über powerful. Abuse of the dragon's abilities are not allowed. Please keep it limited to the elemental class of the dragon, which in my case, is ice.
A baby dragon starts out with a mere 50 health and 100 MP, but as it grows, its magical power, health, and stats increase. Starter Attack: Bite
IN SHORT:

Your a level one and you have a dragon to fight by your side? So you give up your survivor move, barely anybody here uses it.
And when you can't give it mana, it turns to a warrior, thats more rigged from the start.
You can have a dragon warrior but not now. There are job ranks and you can achieve those ranks from leveling.
Go think of something else.

I roll out of the way of the incoming attack, and I use the minor health potion to regain some life.

I use the shield I stole from the dead bandit to defend from the attack.
