Oatmeal Pies
Heheheh...
I love dessert did you know that?
That and steak.
So yeah, here we go.
Ingredients
2 Cups Packed Brown Sugar
3/4 Cup of Butter
2 Eggs
1/2 Tablespoon of Salt
1 Teaspoon of Ground Cinnamon
1 Teaspoon of baking Powder
3 Tablespoons of Boiling Water
1 Teaspoon of Baking Soda
2 1/2 Cups of All-Purpose Flour
2 Cups of Quick Cooking Oats
1 Egg White
2 Tablespoons of Milk
1 Teaspoon of Vanilla Extract
2 Cups of Confectioners' Sugar
3/4 Cup of Shortening
Directions
1) Preheat oven to 350 degrees F (175 degrees C). Lightly grease baking sheets.
2) Cream butter or margarine with the brown sugar until light and fluffy. Beat in the eggs and mix well. Stir in the salt, cinnamon, baking powder, boiling water, baking soda and flour. Mix to combine, then stir in the oats.
3) Drop cookies onto the prepared baking sheets. Bake at 350 degrees F (175 degrees C) for 10 to 12 minutes. Let cookies cool then make sandwiches from two cookies filled with Pie Filling.
Filling
Beat egg white. Mix in the milk, 1 teaspoon vanilla and 1 cup confectioners' sugar. Beat in the shortening and remaining 1 cup confectioners' sugar. Beat until light.
