Evangelion is a classic, one of the first good animes out there. Chronologically, it is one of the oldest too, released in the 1990s. I recommend you watch Full Metal Alchemist, also a classic. For FMA, there are two anime series, the original and Full Metal Alchemist: Brotherhood. The original diverges from the manga around halfway in, and Brotherhood follows it completely.

Nah, there have been good animes before 1990 like Dragonball 1986–1989, Gundam 1979-1980, Akira 1988 or Appleseed 1988. I really like that style and distinct look of those old animes.
